La Bodega Fabre was the first winery Montmayou Boutique built in Argentina by Domaine Vistalba SA in 1992. It was located in the area of Vistalba - Lujan de Cuyo, at 1,150 meters, with the first purchased 15 hectares of Malbec. For the winemaking Fabre Montmayou vineyards were acquired only in the best areas of Mendoza, the French grape varieties for their age are considered native.
The cultivation of vines is made in the traditional way (low yield in quantity) and organic without the use of herbicides, to ensure the production of grapes of great character and best expression of terroir. In December we made a cluster thinning in order to obtain a maximum concentration of flavors, to further reduce yield (around 45 hectoliters per hectare).
Harvesting is done manually, after strict control of maturity, placing the cluster in small boxes of 20 Kg to avoid damage. In the winery, the grapes are dumped on a table where a strict manual selection can eliminate clusters that are not in perfect condition. Then, after separating the grains from the stalk, it performs a second manual sorting grain by grain. The fermentation is done with indigenous yeasts present on the skin of grapes and with a strict temperature control. The vinification is carried out by our winemaker applying techniques used in the most prestigious chateaux in France.
With the same desire for excellence, we chose the traditional hydraulic press to press the red marc and art pneumatic press for white grapes. Once malolactic fermentation produced, some of the wines are aged in French oak barrels of 12 to 16 months with racking every three months, ending with a clarification (before bottling) with fresh egg whites, which ensures a "clarity" perfect, without altering the character and structure of wines.
